Spicy Chicken Potato Pie

4 tsp oil
3-4 chicken breasts, cut into strips
1 teaspoon grated ginger
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup chicken broth

3 spring onions, chopped
1 red pepper, chopped
1 teaspoon hot pepper sauce
2 cups baby carrots
2 cups mushrooms, halved
Mashed potatoes
1 cup grated cheddar cheese

Preheat oven to 180c. Lightly saute the chicken together with ginger, paprika, salt and pepper. Add mushrooms, sliced carrots and chopped red pepper and fry for five minutes. Add chicken stock and red pepper sauce and simmer for 5 minutes. Pour into oven-proof dish, cover with layer of mashed potatoes topped with grated cheese. Bake for 20 minutes.
