Orange and Caramelized Onion-Flavored Salmon Fillet
1 thinly sliced onion
1/4-teaspoon thyme
1 cup orange juice
1/2 cup white wine
Salt & pepper to taste
Cooked salmon fillets

Saute onions until brown, add thyme, orange juice and wine. Simmer for a few minutes. Thicken with roux (melted butter mixed with flour to make a paste.) Add salt & pepper as desired. Cook salmon and top with sauce.
