Scones
8 oz bread flour, sieved
2 oz butter
1 ¾ oz sugar
egg
4 ¾ oz milk

Beat sugar and butter, then beat in egg. Add half milk and half flour and mix. Then do the same with the rest of the flour until you have a smooth dough. Roll out to ½ inch thick. Cut with a 2-inch cutter. Brush with egg. Bake at 44 degrees for 15 minutes. When cool, split and spread on cream and jam.
