Fajitas de la Denise

A recipe by the lovely and talented Denise Hamilton, which I first enjoyed at her gracious home in Las Vegas.

1 1/2 lb boneless, skinned chicken
1 red and 1 green pepper
1 tsp garlic
1 tsp ground red pepper
1/2 tsp cumin


Refried beans, tortillas, guacamole, grated cheese, sour cream and salsa as desiired

Cut chicken into bite-size pieces and stir fry in minimum olive oil, Cut peppers into strips and add to pan along with spices, stir frying all together 5-10 minutes. Serve with accompaniments on warm tortillas. (Warm tortillas for 20 secs each in microwave oven.)
